I'm Having Carb Fears

It was a day of eating nothing but leftovers which was nice because, I needed a break from cooking. Green Smoothie in the morning, a Barry’s Bootcamp Session,Lazy Pad Thai for lunch, Beans and Rice for dinner, then I was still hungry so I ate a leftover baked potato with broccoli and vegan cheese (Nutritional Sauce!).
After eating I’ve felt satisfied and full in my stomach and full of anxiety in my head. I’m experiencing major carb fear. When I’ve cooked all the aforementioned food I did make a concerted effort to put in more vegetables, especially green ones, than I normally would. But is it enough? Am I too carb heavy now? Right now the food fad is to eat low carb high protein and I can’t help all those Paleo food blogs I was reading last week seem to be whispering in my ear, “You’re doing it wrong.”
After the juice cleanse I was so sure I’d gain the weight back, I was positiveI’d gain some back. And then I didn’t, and I was shocked. But now, I’m not mentally ready to gain any of the weight back, I want to lose another two pounds while being vegan. That would mean this month I lost 10 pounds in total. That’s a nice round number and would be very satisfying. I do want to lose weight, I didn’t start this challenge solely shed pounds. Part of it was to see which diet/lifestyle works better on my body then, over the coming months, I can continue down that path. I’m trying to avoid stepping on the scaled everyday and keep to just weighing myself during the day’s I post it on here. If I start weighing myself everyday I’ll drive myself insane. A person’s weight can fluctuate day to day do to water retention of lack of so being on the scale every day can be a bit of a mind fuck.
On a whole, being vegan has been fine. I haven’t tried eating out at a restaurant yet. But I like the meals, and they’re easier to make than meat dishes. I was a vegetarian through my early 20’s and didn’t really try cooking meat on a regular basis till I moved to London so whenever I do, it’s a big production for me. Also, my tummy seems to like a vegan diet better. Surely I won’t gain weight. Maybe maintain, but not gain. I’m still off processed foods, alcohol, sugar, and wheat. I’m also exercising on a regular basis. I won’t gain any weight doing all that will I? …will I?
